Without seeing the space and knowing exactly how people move around the area, it's a little hard to say but, a 3' x 24' mat would probably work well for your space. The 3 feet gives you sufficient room to move forward and backward while standing in front of the workbench (and not having to worry about stepping on and off the mat). Having the extra foot along the width will allow you to have full foam-thickness coverage just passed the ends of the bench so that you're not just standing on beveled edges when working close to the ends of the bench.

Sweeping / vacuuming so take care of most of your day-to-day dirt and debris.  For a deeper cleaning, Hog Heaven matting can also be cleaned with a hose and a neutral pH detergent (like dish soap).  After hosing down the mats should be laid flat or hung to dry and must be completely dry before using again.
